500kcal Greek Halloumi Bowl
Serves: 1
INGREDIENTS
Potatoes
150 g potato fries
Salt
Black pepper
Dried dill
Chickpeas
80 g chickpeas
1 spray olive oil
1 tsp sriracha
1 tsp cumin
Chilli flakes
Salt & pepper
Cucumber salad
Cucumber
Fresh dill
Lemon juice
1 tsp olive oil
Pinch of salt
To serve
75 g tzatziki
45 g halloumi
10 g feta
Red onion
Extra chilli flakes
METHOD
Air fry the potato fries until crispy. Season with salt, black pepper and dried dill while still warm.
Spray the chickpeas with a little oil and fry with sriracha, cumin, chilli flakes, salt and pepper until crispy.
Pan fry the halloumi until golden.
Cut the cucumber into chunky pieces and toss with lemon juice, olive oil, salt and fresh dill.
Spread the tzatziki onto a plate or bowl and top with the potatoes, chickpeas, halloumi and cucumber salad.
Finish with feta, red onion and extra chilli flakes.
