Crispy chicken caesar pasta salad

INGREDIENTS

For the chicken:

1 chicken breast, halved lengthwise and pounded

Salt to taste

1 tsp garlic powder

1 tsp onion powder

1 tsp black pepper

1 tsp smoke paprika powder

Oil for frying

For the breadcrumbs :

2 cups bread crumbs

1 tbsp parsley

1 tbsp lemon zest

1 tbsp dried basil

For egg wash:

2 eggs

1/3 cup water

For the dry batter:

1 cup all purpose flour

Salt to taste

1 tsp black pepper

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp smoked paprika powder

For the Caesar salad:

1/2 cup mayonnaise

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

2 cloves garlic, minced

2 tsp lemon juice (adjust to taste)

2 cups lettuce washed and chopped

2 tbsp extra virgin olive oil

1/3 cups lettuce freshly grated Parmesan cheese

1 tsp freshly ground black pepper

Salt to taste

1-2 tbsp water ( to thin out the sauce )

To assemble:

3/4 cup boiled pasta of choice

Parmesan cheese for garnish

Lemon juice ( for garnish)

Salt and pepper to taste

1-2 tbsp extra virgin olive oil

METHOD

Season the chicken with salt, garlic powder, onion powder, black pepper, and smoked paprika. Set aside.

In a bowl crack eggs add water and whisk until smooth, set aside.

In another bowl mix all purpose flour, salt, pepper, garlic powder, onion powder, smoked paprika powder.

In a separate bowl add panko bread crumbs, parsley, basil and lemon zest.

Coat the seasoned chicken fillets in egg wash, then dip them in dry flour, followed by egg batter. Finally, coat them in bread crumbs.

Heat oil in a pan over medium heat. Fry chicken for 4–5 minutes per side, or until golden brown and cooked through. Slice into strips.
In a bowl, whisk together mayo , Dijon mustard, Worcestershire sauce, minced garlic, lemon juice, and grated Parmesan cheese. drizzle in olive oil while whisking continuously until the mixture becomes smooth and creamy. Add water as needed. Season the sauce with salt pepper to taste.

In a bowl, combine lettuce, pasta & Parmesan cheese. Add olive oil and toss gently, add Caesar dressing mix.

Plate and top it with crispy chicken. Finish it off with Parmesan, lemon juice, and black pepper.
