How to make the viral M&S chicken Kyiv sandwich with parmesan fries

Serves: 1

INGREDIENTS

M&S ciabatta with garlic butter

A handful of rocket

Juice of ½ a lemon, plus a drizzle of olive oil for dressing the rocket

2 buttermilk-marinated chicken tenders (breaded, ready to fry or bake)

M&S chicken Kyiv hot melting dip

Grated parmesan, for topping

Fresh parsley, chopped

For the fries:

A portion of frozen French fries

Salt and black pepper, to taste

Grated Parmesan, to finish

Fresh parsley, chopped, to finish

METHOD

Bake or fry the French fries according to packet instructions until golden and crisp and toast the ciabatta halves.

Toss the rocket with a squeeze of lemon juice and a little olive oil to dress lightly.

Cook the buttermilk chicken tenders (oven or fryer) until crisp and cooked through.

Warm the Kyiv-style garlic butter dip and either drizzle it over the hot chicken tenders once cooked.

Then it’s time to build the sandwich: garlic ciabatta base, dressed rocket, buttermilk chicken tenders, a spoonful of the melted Kyiv dip, a scattering of Parmesan and parsley, then top with the other ciabatta half.

As soon as the fries are out of the fryer/oven, toss with salt, pepper, a generous grating of Parmesan, and chopped parsley.

Plate the sandwich alongside the loaded Parmesan fries and enjoy al fresco.
