Sweet and spicy prawn tacos with sesame and chilli

INGREDIENTS

100g prawns

Half block halloumi

2 diced peaches

3 spring onions finely chopped

1 red chilli finely diced

Handful of coriander finely chopped

1 avocado

Lime juice

To make the sauce, mix together:

50g La Vieja Fábrica Fine Cut Marmalade

2.5 tbsps Sweet Chilli Sauce

2 tsps Sesame Oil

½ tsp Fish Sauce

½ tsp White Wine Vinegar

Pinch of Aleppo Flakes

METHOD

Use half of the sauce to marinate the prawns/halloumi for an hour in the fridge (I used both, but the halloumi was amazing for a veggie option!)

While they soak up all that flavour, make a simple salsa with: 2 diced peaches, 3 finely chopped spring onions, 1 finely diced red chilli, a handful of coriander finely chopped and a generous spoonful of the remaining sauce.

When ready to serve, pan-fry your prawns and halloumi for a couple of minutes on each side, ensuring the prawns are fully cooked.

Warm some corn tortillas in a pan or oven and spread them with some smashed avocado. Fill them with the cooked prawns and/or halloumi before topping them with the salsa you made earlier.

Drizzle the tacos with the remaining sauce for a spicy, zesty, sunny delight.
