The ultimate healthy cheese toastie recipe

Serves: 1

Nutrition: Approx. 480 kcal and 17g protein

INGREDIENTS

2 slices bread of your choice

1/2 small avocado

1/4 red onion, finely diced

Handful of basil, chopped

1 tsp honey

Pinch of chilli flakes

2 heaped tbsp low-fat all things cottage cheese

5 sundried tomatoes, drained and chopped

METHOD

Mash the avocado in a bowl with the red onion, basil, honey, chilli flakes, salt and black pepper.

Brush the outside of the bread with the sundried tomato oil, then flip the slices over so the oiled sides are facing down.

Load one side with the cottage cheese and the other with the mashed hot honey avocado. Scatter over the chopped sundried tomatoes, then sandwich together.

I like to pre-slice the toastie before cooking to stop the filling going everywhere.

Toast in a frying pan over a medium heat, pressing down gently, until golden and crisp on both sides. You can also air fry until crisp and golden at 200c.
