FROM MICHELIN KITCHENS TO MELTED CHEESE DREAMS

Owner Josh Richardson knows his way around a kitchen. With nearly two decades of experience, from humble pub grub to Michelin-starred fine dining, Josh’s culinary journey has led him right back to his roots, to Ouseburn and to the comfort food that started it all.

“I’ve been a chef for about 16 or 17 years,” Josh says. “I’ve worked everywhere, but I’ve always loved burgers. Back in 2012, I started making them at home — and it just grew from there. I always thought, ‘I can do this better than anyone else’.” (And we can confirm he’s 100% right.)

Confidence like that might sound bold, but one bite of a Pattymelt and you’ll see he’s got the juicy burgers (and the perfect cheese pull) to back it up.

LOCAL LOVE: BURGERS MADE FROM THE BEST OF BRITISH

It’s not just passion that makes Pattymelts stand out – it’s the obsession with quality, which Josh says is his secret to success. He has built his menu on locally sourced, high-end ingredients that most restaurants would reserve for fine dining.

“Our beef comes from R & J Butchers in North Yorkshire,” he explains. “They supply Michelin-starred places like House of Tides and The Black Swan, so we’re using the same quality produce they do. The cows are reared and processed on-site, just 60 miles away. You can really taste the difference.”

The bread? Josh used to make his own in-house but couldn’t keep up with the demand on his own, so now Pattymelts’ soft, golden milk loaves come from Zees Heaton. Even the cheese curds for his poutine come from a small producer in Devon, and his potatoes are sourced through The Food Heroes, an organisation connected to legendary chef Pierre Koffmann.

“They’re honestly the best spuds in the UK,” Josh says. “When you’re making something simple like a burger, every ingredient has to be perfect. That’s what makes the difference.”

A MARVELOUS MEATY MENU TO MELT FOR

Pattymelts’ menu reads like a love letter to comfort food. The signature Pattymelt is a double beef patty with American cheese, mozzarella, grilled onions, shredded lettuce, and house sauce, served between slices of toasted milk loaf.

Then there’s the bacon jalapeño melt – a spicy, cheesy masterpiece that started life as Josh’s personal order from Five Guys before evolving into a North East icon.

Our other go-to orders include the classic double, the chicken melt (featuring buttermilk chicken and ranch), and even moving mountains, a vegan option that proves everyone can join the Pattymelts movement. Add on house fries cooked in beef tallow or go big with loaded fries topped with a pressed patty, pickles and melted cheese — because moderation is overrated.

Oh, and don’t sleep on breakfast. Pattymelts’ brekkie sandos – especially the cure (complete with sausage, bacon, black pudding, hash brown, egg and cheese) – are a perfect hangover cure.
