Cherry crumble chocolate yoghurt bowl

Serves: 1

INGREDIENTS

Chocolate yogurt

1 cup plain coconut yogurt (or your favorite plain yogurt)

1 tbsp cocoa powder

Cherry oat crumble

1 cup cherries, fresh or frozen, pitted

1 tsp butter

1 tbsp maple syrup

¼ cup rolled oats

½ tsp ground cinnamon

Toppings

1 tbsp sliced almonds

1 tsp cacao nibs

1 tbsp chopped dark chocolate

METHOD

Make the chocolate yogurt.

In a bowl, whisk together the yogurt and cocoa powder until smooth and evenly combined. Spread into your serving bowl.

Cook the cherry crumble.

Melt the butter in a small saucepan over medium heat.

Add the cherries, maple syrup, cinnamon, and rolled oats.

Cook for 5–8 minutes, stirring occasionally, until the cherries soften and become juicy and the oats absorb some of the liquid. The mixture should be thick and jammy.

Assemble the bowl.

Spoon the warm cherry oat mixture over the chocolate yogurt.

Finish with toppings.

Sprinkle over the sliced almonds, cacao nibs, and chopped dark chocolate.

Serve. Enjoy immediately while the cherry crumble is warm against the cool chocolate yogurt.

Optional additions:

A pinch of sea salt to enhance the chocolate flavor.

Vanilla extract mixed into the yogurt.

A fresh cherry or extra drizzle of maple syrup for garnish.
