Hot honey beef tortilla kebabs
Requires: Air fryer
Makes: 4 skewers
INGREDIENTS
400g beef mince
5 tortilla wraps
1 tbsp smoked paprika
1 tbsp chicken seasoning
1 tbsp garlic granules
1 tsp chilli flakes
3 tbsp honey
1 pepper
1 onion
1 tbsp Greek yoghurt
2 cloves garlic
Chopped parsley
3 tbsp butter, 1 tbsp chicken seasoning and 2 tsp chilli flakes
2 large potatoes – coated in 1 tbsp peri seasoning, 1 tbsp smoked paprika, 1 tbsp chicken seasoning
1/4 cucumber
6 tomatoes
Fresh lime juice
2 tbsp peri mayonaise
2 tsp chipotle mayonaise
2 tbsp hot honey
METHOD
Chop the potatoes into wedges and add to the air fryer, coat in a drizzle of oil and the seasoning. Air fry for 30 minutes on 185. Sprinkle with a little more seasoning when done.
Chop all the veg as small as possible, add the mince to a large bowl, add in the pepper, onion, half the garlic, honey, along with the seasoning. Stir until combined – or use your hands. Then add in the Greek yoghurt and stir again.
Chop the tortilla wraps into squares, layer the mixture on top and flatten until it’s covering the wrap, continue until you run out of mixture.
Chop as shown in this video, then add four skewers and chop again. Add into the air fryer and cook for 20 minutes on 185.
Melt the butter with the rest of the garlic, parsley, remaining honey, and seasoning.
Remove the kebabs and coat in the garlic butter, then return to the airfryer for a further 5 minutes.
Prep the salad and add fresh lime juice, chopped parsley and a drizzle of olive oil, along with salt & pepper.
Plate up and add the hot honey over the kebabs, I served with a chipotle, peri mayo.
