Chilli jam doughnuts

Serves: 8

Prep: 2 hours (including proving time)

Cook: 20 minutes

INGREDIENTS

225g Strong white bread flour

1⁄2 tsp Salt

1 tbsp Golden caster sugar

15g Butter, unsalted and melted

7g Fast action yeast

125ml Warm water

1 Egg

Vegetable oil for frying

210g Jar Tracklements Fresh Chilli Jam

Caster sugar for coating

METHOD

Place all the ingredients except the oil, Fresh Chilli Jam and sugar for coating in a large bowl, mix and knead for 10 mins.

Cut the dough into eight and shape into balls. Leave to prove on a greased tray until doubled in size.

Heat the oil in a pan to a medium heat. Deep fry the doughnuts until golden brown, drain and toss in sugar.

When the doughnuts are cool, place the Fresh Chilli Jam in a piping bag. Make a small hole in the side of each doughnut and fill with the jam.
