Banana bread overnight oats

INGREDIENTS

1 ripe banana

½ cup almond milk (or any preferred milk)

¼ cup nonfat or low-fat plain Greek yogurt

½ tsp vanilla extract

½ cup old-fashioned rolled oats

1 tbsp chia seeds or ground flaxseed

¼ tsp ground cinnamon

A pinch of salt

1–2 tsp maple syrup or honey (optional)

1–2 tbsp toasted chopped pecans (optional)

METHOD

In a small mixing bowl, mash the banana with the milk, yogurt and vanilla extract until well blended. Stir in the oats, chia seeds or ground flaxseed, cinnamon, salt and maple syrup if using, and mix until everything is combined.

Transfer to a mason jar or container with a lid, cover and refrigerate for at least 3 hours or overnight.

When ready to eat, top with toasted pecans if using, and enjoy straight from the jar.
