Viral hot honey protein bowl

Serves: 4

INGREDIENTS

4 small sweet potatoes, cubed

½ tsp smoked paprika

1 tbsp olive oil

500g lean beef mince

1 tomato, finely diced

1 sachet taco seasoning

1 x 400g tin four bean mix, drained and rinsed

120g rocket and spinach mix

1 avocado, sliced

300g cottage cheese

Hot honey (or honey + chilli flakes)

Finely chopped parsley, to garnish

METHOD

Preheat oven to 200°C fan-forced. Toss sweet potato with olive oil, smoked paprika, salt and pepper. Roast for 25–30 mins until golden and crisp. I usually do this in the airfryer for this and it takes about 20-25 mins.

Meanwhile, cook the beef mince in a large pan until browned. Add diced tomato, taco seasoning and four bean mix. Simmer for 3–4 minutes until heated through.

Assemble bowls with rocket and spinach, sweet potato, beef mix, sliced avocado and cottage cheese.

Drizzle with hot honey and top with chopped parsley.
