Guinness espresso martini

Serves: 2

INGREDIENTS

For the coffee sugar syrup

100 g sugar

50 ml water

10 g coffee beans

For the martini

90 ml vodka

60 ml Guinness

30 ml coffee sugar syrup

60 ml espresso (cooled to room temperature)

Ice cubes

To garnish

6 coffee beans

METHOD

Make the coffee sugar syrup (24 hours ahead)

Whisk the sugar and water together in a bowl until the sugar dissolves. Add the coffee beans and transfer to an airtight container. Refrigerate and allow to infuse for 24 hours. Strain the syrup through a fine sieve to remove the beans. Store in the fridge for up to 2 weeks.

Make the Guinness espresso martini

Fill a cocktail shaker halfway with ice. Add the vodka, Guinness, coffee sugar syrup, and cooled espresso. Shake vigorously until well chilled. Strain through a sieve into a chilled martini glass. Garnish with 3 coffee beans per glass and serve.
