Chocolate chia pudding

Servings: 3

INGREDIENTS

1½ cups unsweetened almond milk (or milk of choice)

6 tablespoons chia seeds

2–3 tablespoons maple syrup (or honey / other sweetener)

2 tablespoons cocoa powder

⅛ teaspoon salt

1 teaspoon vanilla extract

Optional toppings: fresh raspberries, chocolate chips, nuts, granola, or coconut

METHOD

Add the almond milk, chia seeds, maple syrup, cocoa powder, vanilla extract and salt to a bowl or jar.

Whisk or stir until everything is well combined.

Let the mixture sit for 5 minutes, then stir again to break up any clumps of chia seeds or cocoa powder.

Cover and place in the fridge until thick and creamy — ideally overnight, though it can be ready in about 30 minutes.

Before serving, stir again and add a little extra milk if it’s too thick.

Serve with your preferred toppings such as berries, chocolate chips, or nuts.
